Chicken Satay Skewers with Coconut & Curry

Ingredients
2 lbs chicken breast (cut into strips) or boneless chicken thighs
2 tbsp curry powder
1/2 cup coconut milk (divided: 1/4 cup marinade, 1/4 cup for basting)
1 tbsp fish sauce (optional, for added depth)
Bamboo skewers (soaked in water if grilling)
1 tsp turmeric powder (optional)
Salt and pepper to taste
Directions
- In a bowl, combine chicken, curry powder, 1/4 cup coconut milk, salt, pepper, turmeric (if using), and fish sauce (if using). Mix well.
- Cover and marinate for at least 1 hour, or overnight for deeper flavor.
- Preheat grill to medium-high heat and lightly oil the grates.
- Thread marinated chicken onto bamboo skewers.
- Grill skewers for 10–15 minutes, turning occasionally. Baste with remaining coconut milk while grilling.
- Cook until chicken is fully done and lightly charred.
- Serve hot with peanut sauce.
