Ingredients
2 lbs chicken breast (cut into strips) or boneless chicken thighs
2 tbsp curry powder
1/2 cup coconut milk (divided: 1/4 cup marinade, 1/4 cup for basting)
1 tbsp fish sauce (optional, for added depth)
Bamboo skewers (soaked in water if grilling)
1 tsp turmeric powder (optional)
Salt and pepper to taste
Directions
  1. In a bowl, combine chicken, curry powder, 1/4 cup coconut milk, salt, pepper, turmeric (if using), and fish sauce (if using). Mix well.
  2. Cover and marinate for at least 1 hour, or overnight for deeper flavor.
  3. Preheat grill to medium-high heat and lightly oil the grates.
  4. Thread marinated chicken onto bamboo skewers.
  5. Grill skewers for 10–15 minutes, turning occasionally. Baste with remaining coconut milk while grilling.
  6. Cook until chicken is fully done and lightly charred.
  7. Serve hot with peanut sauce.
